Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
1/2 tsp. salt
2 tsp. soda
2 tsp. cinnamon
1 1/4 c. sugar
1 1/2 c. shredded carrots
2 large apples, shredded
1/2 c. pecans
3/4 c. coconut
1/2 c. raisins
3 eggs, slightly beaten
1 tsp. vanilla
1 c. oil
Preparation

Combine the first 4 ingredients in a large bowl.
Stir in sugar, then add carrots, apples, pecans, coconut and raisins. Combine and add to dry ingredients the eggs, vanilla and oil. Stir just until moistened.
Spoon batter into greased muffin pan, filling 3/4 full.
Bake at 375\u00b0 for 18 to 20 minutes, or until golden brown.
Makes 2 dozen.
