Eggplant Parmesan - cooking recipe

Ingredients
    1 large or 2 small eggplants
    salt as needed
    3 eggs
    1/2 c. water
    1 c. all-purpose flour
    1/2 tsp. salt
    1/4 tsp. pepper
    1 1/2 c. plain dry bread crumbs
    oil or shortening for frying
    1 qt. tomato sauce (warm)
    1 1/2 lb. Mozzarella cheese, sliced
    1/2 c. grated Parmesan cheese
Preparation
    Peel eggplant and slice lengthwise into 1/4-inch thick slices. Salt slices, place in colander and allow to stand for 30 minutes. Wash off salt and dry slices.
