Ingredients

2 c. beets
2/3 c. beet juice and water
1 Tbsp. cornstarch
4 tsp. sugar or substitute
1/2 tsp. salt
3 Tbsp. vinegar
Preparation

Heat beets with liquid.
Mix cornstarch, sugar, salt, pepper and vinegar. Stir into beets. Cook, stirring constantly, until smooth, clear and thickened.
