Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant, peeled and cubed
    1 1/4 c. cracker crumbs
    1 1/4 c. (5 oz.) shredded sharp cheese
    2 slightly beaten eggs
    2 Tbsp. parsley flakes
    2 Tbsp. chopped onions
    1 clove garlic, minced, or garlic salt
    1/8 tsp. black pepper
    3 Tbsp. oil
Preparation
    Cook eggplant until tender; drain and mash.
    Stir in crumbs, cheese, eggs, parsley, onion, garlic, salt and pepper.
    Shape into 8 patties.
    Cook in hot oil about 3 to 5 minutes each side, until brown.
