Santa Fe Chicken - cooking recipe
Ingredients

2 1/2 lb. chicken, skinned
1 Tbsp. cumin
1 clove garlic, crushed
1 can tomato sauce
1 (14 1/2 oz.) can Mexican-style stewed tomatoes
1 (4 oz.) can diced green chilies
2 zucchini, sliced
Preparation

In a large skillet, brown chicken in oil 10 or 15 minutes. Drain.
Salt and pepper to taste. Stir cumin and garlic into tomato sauce.
Pour over chicken.
Add rest of ingredients. Cover and simmer 10 minutes.
Uncover and cook on high 10 minutes or until chicken is done. Serve with hot cooked rice.
Makes 4 to 6 servings.
