Lemon Delight - cooking recipe
Ingredients

24 crushed graham crackers (individual sq. or 12 whole sq.)
1 stick margarine, melted
3 Tbsp. confectioners sugar (to mix in crumbs)
1 small pkg. lemon jello
1 c. boiling water
1 c. granulated sugar
1 (8 oz.) pkg. cream cheese
1 Tbsp. lemon juice
1 Tbsp. lemon rind
1 tsp. vanilla
1 (13 oz.) can cold evaporated milk
Preparation

Mix crumbs, margarine and sugar.
Press into glass baking dish (save 10% to sprinkle on top).
Bake at 350\u00b0 for 8 to 10 minutes. Dissolve jello with 1 cup boiling water and set aside.
Do not chill to set.
Cream together granulated sugar and cream cheese, lemon juice, rind and vanilla.
Add jello and combine well.
Beat evaporated milk.
Pour in prepared crust.
Sprinkle with balance of crumbs.
Chill to set.
