Crab And Noodles Au Gratin - cooking recipe

Ingredients
    1 lb. lump or backfin crabmeat
    6 Tbsp. butter
    3 Tbsp. flour
    3 c. milk
    salt and pepper
    1/4 tsp. nutmeg
    1/2 c. heavy cream
    1 egg yolk
    1/3 c. sherry (medium sweet)
    3/4 c. fine noodles
    1/2 c. grated Parmesan cheese
Preparation
    Preheat oven to 375\u00b0.
    Pick over crab to remove any shell pieces. Melt 4 tablespoons of butter in a saucepan and add the flour, stirring with a wire whisk.
    When blended, add the milk, stirring rapidly with the whisk.
    Add salt and pepper to taste, nutmeg and cream.
    Bring to a boil and simmer, stirring occasionally, for about 5 minutes.
    Remove the sauce from the heat and add the egg yolk, stirring rapidly with the whisk.
    Add the sherry.
