Apple Pecan Muffins - cooking recipe
Ingredients

1 1/4 c. flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/8 tsp. salt
1 c. sugar
1/2 c. vegetable oil
1 large egg
2 Tbsp. lemon juice
1 1/2 tsp. vanilla
3/4 tsp. grated lemon peel
2 c. coarsely grated apples
1/2 c. chopped toasted pecans
Preparation

Preheat oven to 350\u00b0.
Grease 1/2 cup muffin pans.
Sift flour, baking soda, cinnamon and salt.
Combine sugar, oil, egg, lemon juice, vanilla and lemon peel.
Whisk to blend.
Mix in dry ingredients, then apples and pecans.
Spoon 1/3 cup batter into each muffin cup.
Bake about 35 minutes.
Turn muffins out on rack.
Cool slightly.
Serve warm.
Yields 12.
