Blender Potato Soup - cooking recipe

Ingredients
    1/2 c. Wesson oil
    3 c. chopped celery
    1 1/2 c. chopped onion
    1/2 tsp. minced garlic
    1/4 c. chopped fresh parsley
    1/2 tsp. salt
    1/4 tsp. white pepper
    3 (14 1/2 oz.) cans chicken broth
    3 c. peeled, diced potatoes
    shredded Cheddar cheese
Preparation
    In a large saucepan, in hot oil, saute celery, onion and garlic until tender. Stir in remaining ingredients except cheese. Bring to a boil, reduce heat and simmer, covered, 20 minutes or until potatoes are tender.
    Pour half the mixture into blender and puree until smooth. Repeat with remaining soup.
    Sprinkle with cheese before serving.
    Yields 8 cups.
