Carrot Pineapple Bread - cooking recipe

Ingredients
    3 c. sifted flour (plain)
    1 tsp. salt
    3 eggs, beaten
    2 tsp. vanilla
    1 c. grated carrots (fine)
    1 tsp. baking soda
    1 1/2 tsp. cinnamon
    2 c. sugar
    1 c. cooking oil
    1 c. pineapple (small can crushed), undrained (will need juice)
Preparation
    Mix together the flour, soda, salt and sugar. Stir in oil, eggs, carrots and pineapple.
    Mix thoroughly.
    Add vanilla.
    Bake in a 325\u00b0 oven for 40 minutes.
    Makes 6 small pans, or 2 regular pans, bake 1 hour.
