Christmas Fruitcake Muffins - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
1/4 c. brown sugar
1 Tbsp. baking powder
1/4 tsp. salt
1 lightly beaten egg
1/2 c. milk
1/2 stick unsalted, melted butter
1/2 c. diced red and green candied cherries
1/2 c. mixed, diced candied pineapple
1/2 c. seedless raisins
2 tsp. grated lemon rind
2 tsp. grated orange rind
Preparation

Preheat oven to 400\u00b0.
In large bowl, mix flour, sugar, baking powder and salt.
In separate bowl, stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
Fold in the remaining ingredients.
Spoon the batter into greased muffin cups, filling 2/3 full.
Bake until well risen, golden and a thin wooden toothpick inserted in center comes out clean, approximately 25 to 30 minutes.
