Open-Faced Eggplant - cooking recipe

Ingredients
    1 large eggplant, peeled and chopped
    2 medium peppers, chopped
    2 large cloves garlic, minced
    2 Tbsp. olive oil
    1 loaf Italian bread
    1 chopped tomato
    1 small escarole, chopped and steamed
    wine vinegar and capers
    black olives, sliced
    fresh basil
Preparation
    Fry eggplant and peppers with garlic in oil 15 minutes.
    Cut bread lengthwise and divide the eggplant mixture, tomato and escarole between each half of bread.
