Cool Cucumber Soup - cooking recipe
Ingredients

2 c. chicken broth or 2 bouillon cubes, dissolved in 2 c. water
2 to 4 organic cucumbers, peeled, seeded and cut into strips
1 Tbsp. fresh organic onion, chopped
salt and freshly ground pepper to taste
2 c. organic sour cream or yogurt
chopped cucumber and dill (for garnish)
Preparation

Combine broth, cucumbers and onion in a medium saucepan over low heat. Cook until cucumbers are just tender. Transfer to blender and blend with salt and pepper. Chill. When mixture is cool, combine with sour cream and yogurt. Serve in chilled cups or bowls and sprinkle with chopped cucumber and dill. Serves 4. Prep and cook time: 25 minutes.
