Zucchini Relish - cooking recipe

Ingredients
    10 c. zucchini, ground
    4 large onions, ground
    4 large green peppers, ground
    4 large red peppers, ground
    2 1/2 c. cider vinegar
    4 c. sugar (I use 1/2 brown)
    1/2 c. salt
    2 carrots, ground
    2 Tbsp. cornstarch
    1 tsp. turmeric
    1 tsp. nutmeg
    2 tsp. celery seed
    1/4 tsp. black pepper
    1 tsp. dry mustard
Preparation
    Put zucchini, onions, carrots and peppers through food grinder using medium blade.
    Sprinkle with salt.
    Let stand overnight (I let stand about 3 to 4 hours).
    In morning, drain and rinse well with cold water.
    Mix together the remaining ingredients.
    Bring to boil in a large kettle.
    Add the ground vegetables, then simmer for 30 minutes.
    Ladle into hot jars. Makes 7 pints.
