Beet Pickles - cooking recipe

Ingredients
    3 c. sugar
    1 c. water
    2 c. vinegar
    1 tsp. salt
    1-2 Tbsp. pickling spice (in cheesecloth bag)
    3 sticks cinnamon
    1 lemon, sliced wafer thin (or real lemon juice, about 1 tsp.)
Preparation
    Simmer beets in this mixture
    (about 1 1/2 quarts cooked, peeled and sliced beets) about 15 minutes.\tRemove spice bag after 10 minutes of actual simmering.
    Remove cinnamon sticks and lemon slices before packing in jars and sealing.
