Banana Muffins - cooking recipe
Ingredients

2 c. sugar
4 c. flour
1 c. oil
1 1/2 c. buttermilk
16 oz. apricots in light syrup, drained or 6 fresh apricots, chopped
2 tsp. baking soda
3 egg whites, whisked
1 1/2 c. pureed bananas
1 1/2 c. raisins
oat bran
Preparation

Mix sugar, flour and baking soda.
Stir in egg whites, oil, bananas, buttermilk, raisins and apricots.
Stir only to combine. Do not overbeat.
Fill 24 paper lined muffin tins.
Sprinkle oat bran on the top.
Bake at 350\u00b0 for 30 minutes, or until done.
