Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    2 c. peeled, grated raw zucchini
    1 tsp. vanilla
    3 c. flour
    1/4 tsp. baking powder
    1 tsp. each: salt, baking soda and cinnamon
Preparation
    Mix eggs, sugar, oil, zucchini and vanilla.
    In a separate bowl mix flour, baking powder, salt, baking soda and cinnamon. Mix wet and dry ingredients.
    You may add 1/2 cup chopped nuts, if desired.
    Pour into 2 greased loaf pans.
    Bake at 350\u00b0 for 50 to 60 minutes.
    Test for doneness.
    Cool on a rack.
