1 3/4 c. all-purpose flour
1 tsp. baking soda
1 1/2 tsp. baking powder
1/4 tsp. salt
1 c. unsalted butter, softened
1 c. granulated sugar
1 c. firmly packed light brown sugar
2 large eggs
1 tsp. vanilla
1 c. sweetened flaked coconut
1 c. old-fashioned rolled oats
2 c. cornflakes, crushed coarse
Preparation

Preheat oven to 350\u00b0.
In a bowl, stir together flour, baking soda, baking powder and salt.
In a large bowl with an electric mixer, cream together butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition.
Add vanilla and gradually stir in flour mixture until combined well. Stir in coconut, oats and cornflakes.
Drop rounded teaspoons of dough about 2 inches apart onto greased baking sheet.
Bake cookies in batches in middle of oven until browned lightly, 10 to 12 minutes.
Transfer to racks to cool.
Makes about 5 dozen.
