Festive Pork Roast - cooking recipe

Ingredients
    2 lb. boneless pork loin roast
    2 large cloves garlic, pressed
    3/4 c. Dole golden raisins
    1 sprig fresh rosemary (4 inches long)
    1 3/4 c. Dole canned pineapple juice
    3 Tbsp. currant jelly
    1 Tbsp. minced crystallized ginger
    1 Tbsp. cornstarch
    Dole sliced pineapple for garnish
Preparation
    Cut a slit lengthwise through center of pork (not all the way through).
    Lay flat.
    Rub with garlic, salt and pepper to taste; sprinkle with raisins.
    Close roast and tie with a string.
    Place rosemary on top.
    Wrap roast with heavy-duty foil.
    Poke several small holes through foil into pork on all sides.
    Place in roasting pan.
    Roast in a 350\u00b0 oven for 1 to 1 1/4 hours.
