Leek And Potato Soup - cooking recipe
Ingredients

2 large leeks
1 Tbsp. vegetable oil
1 Tbsp. butter
2 medium potatoes, peeled and diced
2 c. chicken broth
salt and pepper to taste
Preparation

Cut off roots and tops of leeks.
Slice and wash.
In soup pot, saute leeks in oil and butter until limp.
Add potatoes and chicken broth.
Simmer 30 minutes or until potatoes are done.
