Spanish Bean Soup - cooking recipe

Ingredients
    1 pkg. Lysander's Spanish bean soup mix (available in produce department Pathmark)
    1 (28 oz.) can Tuttorosso peeled pear shaped tomatoes in tomato juice (New World style), cut up and use juice
    1 diced potato
    1 chopped onion
    1/2 c. Goya olive oil
Preparation
    Soak beans overnight.
    Drain and add 4 cups fresh water. Bring to boil.
    Simmer over medium heat for 1 hour or until done. Add all other ingredients and seasoning pack to taste.
    Add more water if needed.
    Cook 30 minutes or until done.
    Stir occasionally.
