Easy Mexican Chicken - cooking recipe

Ingredients
    1 c. green pepper, chopped
    1 c. onion, chopped
    3 c. cut up chicken (bite size pieces)
    1 to 2 Tbsp. oil
    1 can corn, drained
    1 can chicken broth
    1 1/2 to 2 c. salsa (temperature your choice)
    2 c. uncooked brown Minute rice
    grated Cheddar cheese
Preparation
    Saute pepper and onion in oil until tender-crisp.
    Add chicken; cook, stirring occasionally, until chicken is no longer pink (8 to 10 minutes).
    Add remaining ingredients; bring to boil. Cover, lower heat and simmer 5 minutes.
    Remove from heat, let stand 5 minutes and stir.
    Add cheese to cover top of chicken. Replace lid; let stand until cheese has melted.
