Southwestern Chicken Salad - cooking recipe

Ingredients
    1 lb. boneless chicken
    2 Tbsp. olive oil
    juice of one lime
    1 tsp. cayenne pepper
    1 small onion, chopped small
    1 rib celery, chopped
    1/4 lb. jicama (Mexican turnip), peeled and diced
    4 large dates
    1/4 c. pecans
    1/4 c. cilantro
    1/2 c. mayonnaise
Preparation
    Cut chicken
    up
    into
    1-inch chunks and toss with oil, lime juice and cayenne pepper.
    Salt and pepper is optional to taste. Spoon mixture
    into a pan and bake for 15 minutes in a preheated oven
    at
    375\u00b0
    until
    chicken is cooked.
    Drain and cool.
    Add the rest of the ingredients.
