Carrot Cake - cooking recipe

Ingredients
    3 c. flour
    2 tsp. baking powder
    1 tsp. salt
    1 1/2 tsp. cinnamon
    1 1/2 Tbsp. nutmeg
    2 c. sugar
    1 1/4 c. salted oil (regular oil ok)
    1 Tbsp. vanilla
    3 eggs, separated
    2 c. carrots, finely grated
    1 small can crushed pineapple (undrained)
    1 c. chopped nuts
Preparation
    Sift together first 5 ingredients; set aside. Cream sugar and oil together. Add vanilla and egg yolks, one at a time, mixing well after each one. Mix thoroughly. Add the dry ingredients to oil mixture and mix thoroughly. Add carrots, pineapple and nuts. Mix well. Fold in stiffly beaten egg whites. Bake in 350\u00b0 oven for 80 minutes. When cool, top with Buttermilk Icing. Great family favorite for the holidays.
