Lime-Pineapple Parfait Pie - cooking recipe

Ingredients
    1 c. pineapple juice, drained from 1 large can of crushed pineapple
    1 (3 oz.) pkg. lime flavored gelatin
    1 pt. vanilla ice cream, cut into pieces
Preparation
    Heat pineapple juice to boiling in a 2-quart saucepan.
    Remove from heat.
    Add gelatin.
    Stir until dissolved.
    Add vanilla ice cream to hot liquid.
    Stir immediately until melted.
    Chill, until mixture is thickened, but not set, 20 to 25 minutes.
    Fold in drained pineapple.
    Turn into cooled, baked 9-inch pie shell. Chill until firm, at least 2 hours.
