Ingredients

1 1/2 c. grated zucchini, patted dry
2 Tbsp. finely grated onion
1/4 c. Parmesan cheese
1/4 c. flour
2 eggs, beaten
2 Tbsp. mayonnaise
1/4 tsp. dried oregano
salt and pepper
Preparation

Mix all ingredients.
Spoon batter into skillet with small amount of melted butter or oil.
Flatten with a spatula.
Cook until golden brown on each side.
Serve with sour cream and dill or sour cream and chives.
Tomato sauce and grated Parmesan cheese is an alternative with less fat.
