Broccoli Cheddar Soup - cooking recipe

Ingredients
    1 large onion, chopped
    2 celery stalks, chopped
    6 Tbsp. butter or margarine
    4 Tbsp. flour
    4 to 4 1/2 c. chicken broth
    juice of 1 lemon
    1 lb. Cheddar cheese
    2 c. half and half
    broccoli, chopped fine
    potatoes, diced
    carrots, chopped
    1/4 tsp. salt
    1/8 tsp. pepper
    parsley
Preparation
    Saute onion and celery in butter until tender.
    Stir in flour and cook for 3 minutes.
    Add chicken broth, lemon juice and cheese and cook for 15 minutes.
    (Optional:
    puree in blender after cooking.)
    Add remaining ingredients to mixture.
    Serves 8.
