Calorie Conscious Stuffed Potatoes - cooking recipe

Ingredients
    2 medium baking potatoes
    2/3 c. low-fat cottage cheese
    1 tomato, chopped and drained
    1/4 c. minced fresh parsley
    2 Tbsp. minced chives or green onions
    1/4 tsp. each: salt and pepper
    dash of dill weed, crushed
    1 Tbsp. grated Parmesan cheese
Preparation
    Bake or microwave potatoes.
    Mash pulp and combine with cottage cheese, tomato, parsley, chives, salt, pepper and dill weed.
    Sprinkle with Parmesan cheese and microwave until thoroughly heated.
