Stuffed Zucchini - cooking recipe

Ingredients
    2 medium zucchini
    1/2 c. cooked rice
    1/4 c. chopped onion
    1/4 c. chopped green pepper
    1 c. whole kernel corn
    1/2 tsp. salt
    1/4 tsp. basil
    1 smal tomato, peeled, seeded and chopped
Preparation
    Cut zucchini in half lengthwise.
    Scrape out pulp, leaving a 1/4-inch shell.
    Chop pulp and combine with rice, onion, pepper, corn, salt and basil.
    Place zucchini shells in an 8 x 8-inch dish.
    Mound 1/4 of vegetable mixture into each shell.
    Top with chopped tomato.
    Cover with waxed paper.
    Microwave on High 5 to 7 minutes or until shells are tender, rotating dish 1/2 turn after 3 minutes or bake at 375\u00b0 for 25 to 30 minutes in regular oven.
