Bran Flake Muffins - cooking recipe

Ingredients
    3 c. bran flakes
    1 c. boiling water
    1/2 c. shortening
    1 1/2 c. sugar
    2 eggs
    2 c. buttermilk (regular whole milk can be used)
    2 1/2 c. flour
    1 tsp. salt
    2 1/2 tsp. soda
    1 tsp. vanilla
Preparation
    Pour boiling water over bran flakes and let stand 3 minutes; set aside.
    In separate bowl, combine shortening, sugar and eggs; set aside.
    Sift flour with soda and salt.
    Now, combine all ingredients with buttermilk.
    Bake in greased muffin pan in a preheated 400\u00b0 oven for 20 minutes.
    Makes about 2 1/2 dozen. Batter may be kept in refrigerator up to 4 weeks.
