Spicy Rice Vegetable Casserole - cooking recipe

Ingredients
    3 Tbsp. butter or olive oil
    1/2 green pepper, chopped
    1 onion, chopped
    2 cloves garlic, mashed
    1 1/2 c. rice (uncooked)
    3 carrots
    3 large stalks celery
    1/2 tsp. thyme
    1/2 tsp. oregano
    salt
    pepper
Preparation
    Heat slowly together to prevent burning (stir often) the butter or oil, onion, green pepper, garlic and the rice.
    Slice and stir into mixture the carrots and celery.
    Season with thyme, oregano, salt and pepper.
    Place vegetables and rice in a large baking dish.
    Pour 3 1/2 cups boiling water over the blended mixture; stir thoroughly.
    Cover; bake at 350\u00b0 for 1 hour.
    Makes 6 to 8 servings.
