Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. grated zucchini
    3 c. flour
    3 tsp. vanilla
    1 tsp. salt
    1 tsp. soda
    1/2 tsp. baking powder
    1/2 c. chopped nuts
    3 tsp. cinnamon
    1/2 c. coconut (frozen), thawed (optional)
Preparation
    Beat eggs until light and fluffy. Add vanilla, oil, sugar and squash.
    Mix lightly. Add remaining ingredients.
    Mix well.
    Pour into a 9 x 5-inch greased loaf pan.
    Bake at 325\u00b0 for 40 to 60 minutes.
    (Can also make muffins out of this.)
