Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless chicken, cubed
    1 onion, chopped
    1 green pepper, chopped
    1 (10 oz.) pkg. frozen corn, thawed
    1 c. chicken broth
    1 c. mild salsa
    1 1/2 c. Minute rice (instant)
    1/2 c. (2 oz.) shredded Cheddar cheese
Preparation
    Cook chicken, onion and green pepper until done.
    Add corn, broth and salsa; bring to boil.
    Stir in rice.
    Remove from heat. Let stand 5 minutes.
    Fluff with fork.
    Sprinkle with cheese.
    Let stand 2 minutes or until cheese melts.
    Eat.
