Veal, Turkey Or Chicken Marsala - cooking recipe

Ingredients
    1 Tbsp. flour, divided
    dash of pepper
    7 oz. veal, chicken or turkey cutlets
    2 tsp. oleo
    1/4 c. chicken broth (I use 1/4 bouillon cube in 1/4 c. water)
    3 Tbsp. dry Marsala wine
    sliced fresh mushrooms (optional)
Preparation
    On bread board, mix 2 teaspoons flour and pepper.
    Dredge cutlets in this.
    Melt oleo in heavy frying pan.
    Saute cutlets about 3 minutes on each side.
    Transfer to platter and keep warm. In same heavy frying pan, add rest of flour to pan drippings. Stir.
    Add broth and wine.
    Cook 1 minute, stirring constantly. Spoon over cutlets.
    Serves 2.
