Clam, Bacon And Onion Canapes - cooking recipe

Ingredients
    1 (6 1/2 oz.) can minced clams, drained
    2 slices lean bacon, cooked, drained and chopped fine
    2 Tbsp. minced red onion
    1 Tbsp. minced fresh parsley leaves
    2 Tbsp. freshly grated Parmesan cheese
    2 Tbsp. mayonnaise
    18 (1 1/2-inch) rounds, cut from slices of white or whole wheat bread, toasted lightly.
Preparation
    In a small bowl, stir together the clams, the bacon, the onion, the parsley, the Parmesan cheese and the mayonnaise until the mixture is combined well.
    Spread 1 teaspoon of the mixture on each toast round, mounding it.
    Broil the canapes in a jelly-roll pan under a preheated broiler about 4-inches from the heat for 3 to 4 minutes, or until they are bubbly and golden.
    Makes 18 canapes.
