Oat Bran Fruit Muffins(Low Calorie) - cooking recipe

Ingredients
    1 1/2 c. high-fiber oat bran cereal
    3/4 c. all-purpose flour
    3/4 c. whole wheat flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 c. raisins
    1/2 c. chopped dates
    1/2 c. chopped prunes
    1/4 c. firmly packed dark brown sugar
    1 c. low-fat buttermilk
    1/2 c. honey
    3 Tbsp. acceptable vegetable oil
    2 eggs, well beaten
Preparation
    Preheat oven to 400\u00b0.
    Line muffin tin with paper liners.
    In a large bowl mix oat bran, flours, baking powder, baking soda, cinnamon and dried fruits.
    In another bowl, mix brown sugar, buttermilk, honey, oil and eggs.
    Make a well in dry ingredients. Pour liquid mixture into well and stir gently.
    Do not overmix. Spoon into paper-lined muffin tin.
    Bake 20 to 25 minutes.
    Serves 18; 1 muffin per serving.
