Salami - cooking recipe
Ingredients

4 Tbsp. quick curing salt
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic powder
2 1/2 tsp. coarse ground pepper
1 tsp. hickory smoke salt
1 1/2 tsp. sausage and poultry seasoning
5 lb. ground beef
Preparation

Mix spices and sprinkle in small amounts over meat and mix thoroughly.
Refrigerate for 4 days.
Knead once a day, each day. On the 4th day, knead again and shape into 10 rolls,
1 1/2-inch in diameter.
Bake at 150\u00b0 for 8 hours, turning once.
Cool and refrigerate.
