Sicilian Meat Loaf - cooking recipe
Ingredients

2 beaten eggs
3/4 c. soft bread crumbs
1/3 c. tomato juice
2 Tbsp. parsley
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic or 1/2 tsp. garlic powder
2 lb. lean ground beef
6 oz. Mozzarella cheese, shredded
Preparation

Mix all ingredients, except cheese, on wax paper.
Pat meat to a 12 x 10-inch rectangle.
Sprinkle cheese on top of meat mixture. Starting from short end, roll up meat, using wax paper to lift. Seal all edges well.
Place roll seam side down in a baking pan. Bake in a 350\u00b0 oven for 1 1/4 hours or until done.
