Pineapple Onion Salad - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1 c. pineapple juice
    1 1/2 c. boiling water
    1 Tbsp. lemon juice
    1/2 c. sugar
    14 oz. can pineapple tidbits, drained
    1/4 c. capers, drained
    1/2 c. tiny pickled onions, drained
    3 Tbsp. chopped pimento
Preparation
    Dissolve gelatin in pineapple juice.
    Add boiling water, lemon juice and sugar.
    Stir until dissolved.
    Chill until partially thickened.
    Add remaining ingredients.
    Turn into 6 individual gelatin molds or a 1-quart mold.
    Chill.
    Unmold and serve on lettuce leaves.
    Makes 6 servings.
