Pastor Dave'S Absolute Favorite Banana Yeast Bread(From "A Diary Of Bread") - cooking recipe

Ingredients
    5 1/2 c. all-purpose flour
    2 pkg. yeast
    1/2 tsp. sugar
    1/4 tsp. ginger
    3/4 c. milk
    1 tsp. salt
    1/2 c. sugar
    1/2 c. butter or margarine
    2 ripe bananas, mashed
    2 eggs
Preparation
    In a large bowl, combine 2 cups flour, yeast, 1/2 teaspoon sugar and ginger.
    In saucepan, heat milk, 1/2 cup sugar, butter or margarine and salt until warm and butter is melted.
    Cool to lukewarm.
    Add to dry mixture; add banana, 1 egg and 1 egg yolk. (Reserve white).
    Stir well.
    Add flour gradually and blend to make a stiff dough.
    Turn out on floured surface and knead 5 to 8 minutes until smooth and elastic.
    Place in a greased bowl; let rise until double.
    Punch down; divide into 2 parts.
    Shape in 2 round loaves; place on baking sheet.
    Make slashes about 1/4-inch deep around loaf every 3/4 inch like a sunburst.
