Munching Peanut Brittle - cooking recipe
Ingredients

1 c. sugar
1/2 c. corn syrup
1 c. roasted salted peanuts
1 tsp. butter
1 tsp. vanilla extract
1 tsp. baking soda
Preparation

Mix sugar and corn syrup in 1 1/2-quart casserole dish.
Stir together and microwave on High for 4 minutes.
Stir in peanuts. Microwave on High 3 to 5 minutes until it browns.
Add vanilla and butter to syrup.
Blend well.
Microwave on High 1 to 2 minutes.
Peanuts will be lightly browned and syrup will be very hot.
Add soda and gently stir until light and foamy.
Quickly put mixture onto lightly greased cookie sheet.
Let cool 30 to 60 minutes.
When cool, break into tiny pieces.
Store in airtight container.
