Ingredients

3 c. sifted cake flour
2 tsp. baking powder
1/4 tsp. salt
1 c. shortening
1 lb. powdered sugar
4 beaten egg yolks
1 c. milk
1 tsp. vanilla
1 c. fresh grated coconut
4 stiffly beaten egg whites
Preparation

Sift together flour, baking powder and salt; set aside.
Cream shortening; slowly add sugar.
Cream well.
Add beaten egg yolks and vanilla, then add coconut.
Add flour mixture alternately with the milk.
Fold in egg whites.
Pour into 2 greased and floured 8-inch square pans.
Bake at 350\u00b0 for 25 to 30 minutes.
Remove from pans and cool on wire rack.
Frost with seven minute frosting and cover with grated coconut.
