Chicken Stir-Fry - cooking recipe

Ingredients
    Cooking Spray
    1 tsp. Vegetable Oil
    1 lb. skinned, boned Chicken Breasts, cut into bite-size pieces
    1/2 medium Onion, chopped
    1 medium-size sweet Red Pepper, chopped
    1 medium-size sweet Yellow Pepper, chopped
    1/2 c. Snow Pea Pods
    1/2 c. chopped Broccoli
    1/2 c. sliced Carrot
    1 large clove Garlic, minced
    1/2 tsp. Salt
    1/4 - 1/2 tsp. Pepper
    2 c. cooked Rice (cooked without salt or fat)
Preparation
    Coat a wok or large nonstick skillet with Cooking Spray; drizzle Oil around top of wok.
    Heat at medium-high heat (375) until hot.
    Add Chicken, and stir-fry 2 minutes or until lightly browned.
    Remove from wok, and drain well on paper towels.
    Add Onion and next 8 ingredients; stir-fry 4 minutes or until crisp-tender.
    Return Chicken to wok; stir-fry 2 minutes.
    Serve over rice.
    Yield:
    4 (2-1/4-cups) servings.
