Sweet Potato Muffins - cooking recipe
Ingredients

1/2 c. butter
1/2 c. sugar
1/2 c. brown sugar
2 eggs
1 1/4 c. sweet potatoes, mashed (can use frozen or canned)
1 1/2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1 c. milk
1/4 c. nuts, chopped (walnuts or pecans)
1/2 c. raisins, chopped
Preparation

Grease muffin tins.
Cream butter and sugars.
Add eggs and mix well.
Blend in sweet potatoes.
Stir flour with baking powder, salt, cinnamon and nutmeg.
Add flour mixture to sweet potatoes alternately with milk.
Do not overmix.
Fold in nuts and raisins.
Fill tins 2/3 full.
Bake at 400\u00b0 for 25 minutes. Yields 2 to 3 dozen muffins.
Excellent compliment with a country ham dinner!
