Traditional Easter Sweet Cheese - cooking recipe
Ingredients

1 1/2 qt. goat milk
1 doz. eggs
handful golden raisins (optional)
1/2 to 1 tsp. salt
4 Tbsp. honey
Preparation

Place a gallon of thickened sour milk on the stove.
Stir constantly and heat (about 102\u00b0) until you can press curds of milk together with the hand.
Pour the milk into cheesecloth and thoroughly press out the whey.
Put 2 tablespoons butter in a hot skillet.
Melt, then add the curds, 1 tablespoons soda and salt (approximately 1 teaspoon or according to taste).
Stir with a potato masher. Cook until smooth, then add cream or milk to thickness desired.
Pour into a bowl and it is ready to serve.
