Rice With Lemon - cooking recipe

Ingredients
    5 c. water
    1 1/2 c. arborio
    1 Tbsp. salt
    3 eggs
    2 Tbsp. freshly squeezed lemon juice
    1 c. freshly grated Parmesan plus additional for table
    freshly milled white pepper
    3 Tbsp. unsalted butter
Preparation
    Bring water to boil in large saucepan.
    Meanwhile, in bowl or pitcher with pouring spout, combine rice and salt.
    Over high heat, pour rice into boiling water in slow, steady stream so as not to break boil.
    Reduce heat to medium and simmer uncovered until rice is cooked 12 to 15 minutes.
    Do not stir.
