Lentil Soup With Spinach - cooking recipe

Ingredients
    2 medium onions, sliced
    1 clove garlic, chopped
    2 Tbsp. olive oil
    3 c. water or chicken stock
    8 oz. dried lentils
    1 tsp. salt
    1 (10 oz.) pkg. frozen, chopped spinach
    1 tsp. grated lemon peel
    2 Tbsp. lemon juice
Preparation
    Cook and stir onions and garlic in oil over medium heat until onions are tender. Stir in water, lentils and salt.
    Heat to boiling. Reduce heat. Cover and simmer 1 hour.
    Stir in spinach, lemon peel and lemon juice. Simmer about 5 more minutes. Serves 4.
