Ingredients

1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 Tbsp. sugar
1 egg
3/4 to 1 c. milk
2 Tbsp. Canola oil
Preparation

Sift dry ingredients in a bowl.
In separate bowl, mix egg, milk and oil.
Then add dry ingredients.
Do not overmix.
(The batter should look like heavy cream.)
Drop batter onto skillet that has been oiled.
Flip pancakes when bubbles appear on top. Serve plain or with butter or your favorite syrup.
