Tim'S Chicken Fried Rice(Kao Pael Gai) - cooking recipe

Ingredients
    1 lb. boned, skinned chicken breast
    1/2 lb. (2 c. sliced) yellow onions
    1 bunch green onions
    2 Tbsp. vegetable oil
    2 Tbsp. fine chopped garlic
    1/4 c. plus 2 Tbsp. fish sauce (nam pla)
    1/4 c. granulated sugar
    6 to 8 eggs
    8 c. steamed rice (day old)
    1 cucumber, sliced diagonally 1/8-inch thick
    6 green onions
Preparation
    Slice chicken across grain into 1/8 x 1-inch strips.
    Peel yellow onion, slice into thin strips.
    Set aside separately. Slice white and green parts of green onions diagonally into 1/8-inch pieces; set aside.
