Black Beans And Rice - cooking recipe

Ingredients
    1 pkg. dry black beans
    pinch of oregano
    1 bay leaf
    1/4 c. vinegar
    1 green pepper, chopped
    1 onion, chopped
    3 cloves garlic, chopped
    1/2 c. olive oil
    cooked rice
Preparation
    Wash and pick beans.
    Cover beans with water and bring to a boil.
    Turn off stove and let beans soak for 1 hour.
    Saute green pepper, onion and garlic in olive oil.
    Drain beans.
    Add to pepper and onion mixture.
    Add oregano, bay leaf and salt.
    Add water to cover beans and cook 1 1/2 to 2 hours.
    Add vinegar 5 to 10 minutes before beans are done.
    Serve over cooked rice.
